Description

These Individual Apricot Charlottes offer a sophisticated twist on classic fruit desserts, combining the natural sweetness of firm apricots with the comforting crunch of butter-toasted white bread. The filling is enriched with a hint of dark rum and browned butter, creating a deep, complex flavor profile that balances tartness with richness. Perfect for special occasions or as a stunning finale to a dinner party, each ramekin serves as a self-contained masterpiece. The bread acts as a vessel, soaking up the syrupy apricot juices while maintaining a delicate, crispy texture. Simple to assemble yet impressive in presentation, this dish brings home-style warmth to your table without requiring advanced pastry skills.

Ingredients

Directions

  1. Preheat the oven to 375ðF (190ðC) and position the rack in the middle level.
  2. Melt 1/2 cup (1 stick) of the unsalted butter and allow it to cool slightly for dipping.
  3. Slice the white bread very thinly, removing the crusts if desired for a smoother texture.
  4. Using a round cutter, cut 8 circles of bread to fit the bottom of 4 to 6-ounce ramekins.
  5. Dip each bread circle into the melted butter and place them buttered-side down into the ramekins.
  6. Cut the remaining bread into thin strips, roughly 1 inch wide, to line the sides of the ramekins.
  7. Dip the bread strips into melted butter and arrange them vertically around the inside of the ramekins, overlapping slightly to cover the sides completely.
  8. Cut 8 additional bread rounds to use as lids for the ramekins and set aside.
  9. Peel, pit, and slice 2 lbs of firm apricots.
  10. In a large skillet, melt the remaining 1/2 stick of butter over medium heat.
  11. Add the sliced apricots and cook until they begin to sizzle and release their juices, about 5 minutes.
  12. Stir in 1/2 cup of sugar and continue cooking for another 5 minutes until the juices thicken and become syrupy.
  13. Pour in 1 tablespoon of dark rum and cook briefly to allow the alcohol to evaporate.
  14. Stir in 1/2 cup of breadcrumbs made from the bread trimmings.
  15. Spoon the hot apricot filling into the bread-lined ramekins, filling them almost to the top.
  16. Place the reserved bread rounds on top of the filling, buttered-side up.
  17. Bake for 30 minutes, or until the bread is golden brown and crisp.
  18. Let cool for 2 minutes, then invert onto serving plates and serve immediately.

Note

For best results, use ripe but firm apricots to prevent the filling from becoming too mushy.

If you do not have a round cutter, you can use a small glass to press out the bread circles.

Serve with whipped cream, vanilla ice cream, or a drizzle of apricot jam for added richness.

This recipe is traditionally made with rum, but you can substitute with orange juice or almond extract for a non-alcoholic version.

Ensure the ramekins are buttered lightly before lining with bread to help them release easily after baking.
