Description

This Italian Vegetarian Lasagna is a comforting classic that brings vibrant flavors and satisfying textures to your dinner table. Layers of tender lasagna noodles are nestled between a savory mixture of sautéed mushrooms, zucchini, bell peppers, and spinach, all bound together by a rich blend of ricotta, cottage, and Parmesan cheeses. Topped with tomato sauce and melted mozzarella, this dish offers a perfect balance of earthy vegetables and creamy dairy. It is an excellent choice for weeknight family dinners or meal prep, as it reheats beautifully.

Ingredients

Directions

  1. Preheat oven to 425°F (218°C).
  2. Spray a 13x9-inch (3-quart) baking dish with nonstick cooking spray.
  3. Cook lasagna noodles according to package directions until desired doneness. Drain and keep warm.
  4. Meanwhile, bring sherry to a boil in a large nonstick skillet or Dutch oven over medium-high heat.
  5. Add the chopped onion; cook for 3 minutes, stirring frequently.
  6. Add mushrooms, zucchini, and bell peppers; cook for 5 minutes, stirring occasionally.
  7. Add spinach, basil, and oregano; cook for 2 minutes until spinach is wilted.
  8. Remove from heat and drain the vegetable mixture well to remove excess liquid.
  9. In a medium bowl, combine ricotta cheese, cottage cheese, and Parmesan cheese; mix until well blended.
  10. Place 3 cooked lasagna noodles in the bottom of the prepared baking dish.
  11. Spread 1/3 of the ricotta mixture over the noodles, then top with 1/3 of the vegetable mixture.
  12. Repeat the layering two more times with noodles, cheese mixture, and vegetables.
  13. Top with the remaining 3 lasagna noodles, spread tomato sauce evenly, and sprinkle with mozzarella cheese.
  14. Cover the dish tightly with foil that has been sprayed with nonstick cooking spray.
  15. Bake at 425°F (218°C) for 25-30 minutes, or until bubbly around the edges.
  16. Remove foil and bake for an additional 5 minutes, or until the top is light golden brown.
  17. Let stand for 5 minutes before serving.
