Jacques Cagna’S Chocolate Mousse Loaf
Description
This elegant chocolate mousse loaf is a show-stopping dessert that feels luxurious but is surprisingly simple to assemble. The base and sides are lined with finely grated walnuts, creating a beautiful textural contrast to the silky, dark chocolate interior. Made with melted semisweet chocolate, cocoa powder, and whipped egg whites, the mousse is light yet intensely flavorful. Chilled for several hours, it sets into a firm but tender loaf that slices beautifully. Perfect for holiday gatherings or sophisticated dinner parties, this recipe delivers a professional finish with minimal fuss. Serve it at room temperature to allow the chocolate flavors to fully bloom.Ingredients
Directions
-
Butter the sides and bottom of a 1-quart glass loaf pan. Line the bottom with parchment paper and butter the paper.
-
In a food processor, grate the walnuts. Spread 1 cup of the ground walnuts over the bottom and sides of the prepared loaf pan, pressing gently to adhere.
-
Place egg whites in a clean food processor work bowl. Process for 8 seconds, then pour in the combined vinegar and water while the machine is running. Process for 1 minute and 45 seconds, or until egg whites are whipped and hold their shape. Gently transfer to a mixing bowl and set aside. Do not wash the work bowl.
-
Place the chocolate, cocoa, sugar, and salt into the same work bowl. Turn the machine on and off 4 times to chop the chocolate coarsely, then process for 1 minute until the chocolate is finely chopped.
-
With the machine running, pour the hot melted butter through the feed tube and process for 1 minute, until the chocolate is completely melted. Stop once to scrape down the sides of the work bowl.
-
Add the egg yolks and process for 10 seconds.
-
Spoon the whipped egg whites onto the chocolate mixture in a ring. Turn the machine on and off twice. Run a spatula around the sides of the work bowl to loosen the mixture.
-
Turn the machine on and off 3 more times until the ingredients are mixed. Some streaks of white may be visible; do not overprocess.
-
Transfer the mousse mixture to the prepared pan. Cover with plastic wrap and refrigerate for 3 hours, or until well chilled and set.
-
Carefully separate the mousse from the pan using a thin knife or flexible spatula. Invert onto a serving platter and remove the pan.
-
Press the remaining walnuts into any bare spots on the loaf. Let the loaf sit at room temperature for 30 minutes before serving.

Note
Ensure the food processor bowl is completely clean and dry when whipping the egg whites to ensure they reach stiff peaks.
The butter should be hot when added to the chocolate to help it melt smoothly without seizing.
Do not overmix the egg whites into the chocolate base, or the mousse will lose its airy texture. Streaks are desirable.
This dessert can be made up to 2 days in advance. Keep it refrigerated until 30 minutes before serving.
