  1. Combine the yeast, sugar, and warm water in a large bowl and allow to proof until foamy, about 5-10 minutes.
  2. Mix the salt with the flour in a separate bowl or directly into the yeast mixture.
  3. Add the flour mixture to the yeast mixture, a cup at a time, mixing until you have a stiff dough. Add an additional 1/2 to 1 cup of flour if necessary.
  4. Remove the dough to a lightly floured board and knead until smooth and no longer sticky, about 10 minutes, adding flour as needed.
  5. Place the dough in a lightly buttered bowl and turn to coat the surface with butter.
  6. Cover the bowl and let rise in a warm place until doubled in bulk, about 1 1/2 to 2 hours.
  7. Punch down the dough to release air bubbles.
  8. Turn out the dough onto a floured board and shape into two long, French bread-style loaves.
  9. Place the loaves on a baking sheet that has been sprinkled with cornmeal (do not butter the sheet).
