Description

These "Jiffy" cinnamon buns offer a speedy alternative to traditional yeast rolls, using a biscuit dough method for a tender, flaky texture. The filling combines rich brown sugar, cinnamon, and plump raisins, creating a warm, spiced sweetness in every bite. Topped with a simple vanilla-infused icing glaze, they are perfect for a cozy weekend breakfast or an afternoon treat with coffee. Despite the quick preparation time, they deliver all the comfort of homemade baked goods without the wait for rising dough.

Directions

  1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with butter or non-stick spray.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. Add the cold cubed margarine to the dry ingredients. Use a pastry cutter or fork to cut the fat into the flour until the mixture resembles coarse crumbs.
  4. Make a well in the center of the mixture and pour in the cold milk. Stir gently until a soft dough forms, adding a splash more milk if necessary, but do not overmix.
  5. Turn the dough out onto a lightly floured surface. Knead gently 8-10 times until just combined.
  6. Roll the dough into a rectangle approximately 9x12 inches.
  7. In a small bowl, cream together the softened margarine, brown sugar, and cinnamon until smooth.
  8. Spread the cinnamon-sugar mixture evenly over the entire surface of the dough.
  9. Sprinkle the raisins evenly over the filling.
  10. Starting from the long side, roll the dough up tightly into a log (jelly roll style).
  11. Using a sharp knife, cut the log into 12 even slices.
  12. Place each slice cut-side down into the prepared muffin cups.
  13. Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  14. While baking, whisk together the icing sugar and enough water to create a thin, drizzle-able glaze.
  15. Let buns cool for 5 minutes, then drizzle with the glaze before serving.
