Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. Heat oil in a large skillet over medium-high heat. Add ground beef, chopped onion, and sliced celery. Cook, breaking up the meat with a spoon, until beef is browned and vegetables are tender, about 8-10 minutes. Drain excess fat if necessary.
  3. In a separate saucepan or microwave-safe bowl, combine frozen mixed vegetables and 3/4 cup water. Cook until vegetables are heated through and tender, about 10 minutes if using a saucepan, or according to microwave instructions. Drain any remaining liquid.
  4. In a 2-quart casserole dish, combine the browned beef mixture, cooked vegetables, cream of mushroom soup, soy sauce, cooked rice, salt, and pepper to taste. Stir gently to combine all ingredients evenly.
  5. Break chow mein noodles into pieces and sprinkle over the top of the casserole mixture.
  6. Cover the casserole dish with a lid or aluminum foil. Bake in the preheated oven for 25 minutes, or until heated through. Alternatively, microwave on high for 10 minutes, stirring halfway through.
  7. Let stand for 5 minutes before serving to allow flavors to meld.
