  1. If using dried beans, wash them carefully and soak in enough salted water to cover by 2 inches overnight.
  2. Drain soaking water and bring beans to a boil, then simmer until tender, usually 2 to 3 hours.
  3. Heat 2 tablespoons of oil in a large, heavy skillet over medium heat.
  4. Add chopped onions, garlic, bell peppers, and celery, and cook until the onions are clear and soft.
  5. Remove the vegetable mixture from the skillet and set aside.
  6. Add 1 tablespoon of oil to the same skillet and increase heat to high.
  7. Add the ground beef and sauté, breaking it up, until thoroughly browned.
  8. Drain excess fat from the ground beef and set the meat aside.
  9. In the same skillet, brown the cubed pork shoulder, then drain and set aside.
  10. In a large chili pot, combine the reserved vegetables, ground beef, pork shoulder, and chopped linguiça sausage.
  11. Add tomato sauce, tomato paste, green chiles, diced tomatoes, beef broth, Maggi Seasoning, and all dry spices (chili powder, cumin, paprika, oregano, coriander, salt, black pepper, MSG).
  12. Stir thoroughly to combine all ingredients.
  13. Bring the mixture to a simmer, then reduce heat to very low and cover.
  14. Cook for approximately 5 hours, stirring occasionally.
  15. After 3 hours, check consistency; if too thin, uncover and increase heat slightly to reduce.
  16. If still too thin, mix masa harina with a little water and stir in to thicken; add beer to thin if necessary.
  17. Taste and adjust seasoning, adding hot sauce if more heat is desired.
  18. If using beans, add them during the last hour of cooking.
  19. Serve hot, topped with chopped fresh onions, shredded Monterey Jack cheese, and parsley.
