Description

This comforting dish features tender manicotti pasta tubes generously filled with a blend of ricotta, mozzarella, and Parmesan cheeses. The filling is seasoned with herbs and bound with egg for a smooth texture. Each shell is nestled in a slow-simmered tomato sauce made from sautéed onions, garlic, and tomato paste, creating a robust, savory base. Baked until bubbly and golden, the manicotti offers a perfect balance of creamy interior and tangy exterior.

Ingredients

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Cook manicotti shells according to package directions until al dente. Drain and rinse with cool water to stop cooking; set aside.
  3. In a large saucepan, heat olive oil over medium heat. Add chopped onion and cook until soft and translucent, about 5 minutes.
  4. Add pressed garlic and cook for 1 minute until fragrant.
  5. Stir in tomato paste, water, oregano, bay leaf, salt, and pepper. Bring to a simmer and cook for 10-15 minutes until sauce thickens slightly. Remove bay leaf.
  6. In a large bowl, combine ricotta, mozzarella, Parmesan, egg, nutmeg, and a pinch of salt and pepper. Mix until well blended.
  7. Using a small spoon or piping bag, fill each cooked manicotti shell with the cheese mixture.
  8. Spread about 1 cup of tomato sauce in the bottom of a 9x13 inch baking dish.
  9. Arrange filled manicotti shells in the dish, seam-side down. Spoon remaining sauce over the top of the shells.
  10. Cover the dish with aluminum foil and bake for 30 minutes.
  11. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and slightly golden.
  12. Let stand for 5 minutes before serving.
