Kadju (Curried Cashew Nuts)
Description
This traditional Sri Lankan Kadju dish transforms humble cashew nuts into a luxurious, aromatic side or main. The cashews are gently simmered in a fragrant blend of coconut milk, turmeric, and curry powder, absorbing deep, earthy flavors. A quick sauté with onions and fresh chili adds a savory crunch and vibrant heat, balancing the creamy richness of the coconut. It is a perfect vegetarian accompaniment to rice, roti, or lentils, offering a comforting yet complex taste experience.Directions
