Description

This traditional Sri Lankan Kadju dish transforms humble cashew nuts into a luxurious, aromatic side or main. The cashews are gently simmered in a fragrant blend of coconut milk, turmeric, and curry powder, absorbing deep, earthy flavors. A quick sauté with onions and fresh chili adds a savory crunch and vibrant heat, balancing the creamy richness of the coconut. It is a perfect vegetarian accompaniment to rice, roti, or lentils, offering a comforting yet complex taste experience.

Directions

  1. Wash the cashew nuts thoroughly, then soak them in a bowl of water for at least 2 hours to soften them.
  2. Finely chop the onion and the fresh chili.
  3. Drain the soaked cashews and place them in a saucepan.
  4. Add the chopped chili, 1 teaspoon of curry powder, turmeric, coconut milk, chili powder, salt, fenugreek, and curry leaves to the saucepan with the cashews.
  5. Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
  6. While the cashews simmer, heat the oil in a frying pan over medium heat.
  7. Add the chopped onion to the frying pan and sauté for 2-3 minutes until softened and translucent.
  8. Pour the simmered cashew mixture into the frying pan with the onions.
  9. Cook for another 3-4 minutes, stirring gently, until the sauce thickens slightly.
  10. Sprinkle with the remaining 1/4 teaspoon of curry powder and serve warm.
