Description

This elegant Katish's Cheesecake offers a light, fluffy texture thanks to folded egg whites and a rich, creamy interior. Ingredients

Directions

  1. Preheat the oven to 350&# 194;°F (175ðC).
  2. In a small bowl, combine the crushed zwieback, flour, and softened butter bits until the mixture is evenly moistened and resembles wet sand.
  3. Press the zwieback mixture firmly and evenly into the bottom of a 9-inch springform pan to form the crust.
  4. In a large bowl, use an electric mixer to beat the cream cheese and sugar together until the mixture is light, fluffy, and free of lumps.
  5. Add the egg yolks, minced vanilla bean, and salt to the cream cheese mixture and beat until well combined.
  6. Stir in the sour cream until just incorporated.
  7. In a separate clean bowl, beat the egg whites until they form stiff peaks.
  8. Gently fold the beaten egg whites into the cream cheese mixture in two additions, being careful not to deflate the mixture.
  9. Pour the filling over the prepared crust in the springform pan.
  10. Run a rubber spatula in a circular motion through the filling, about one inch from the rim, to help the cake rise evenly.
  11. Bake in the middle of the preheated oven for 60 minutes.
  12. Turn off the oven but leave the cheesecake inside with the door closed for 30 minutes to cool gradually.
  13. Remove the cheesecake from the oven and let it cool completely on a wire rack.
  14. Cover the cheesecake and refrigerate overnight to set fully.
  15. Before serving, run a knife around the edge to loosen, release the springform ring, and garnish with thin lemon slices.

Note

Ensure the cream cheese and eggs are at room temperature before mixing to prevent lumps.

Do not overmix the batter after adding the egg whites, as this will deflate the air bubbles and result in a denser texture.

The gradual cooling in the turned-off oven helps prevent the center from collapsing or cracking.

For best flavor and texture, allow the cheesecake to chill overnight.
