Description

This refreshing Key Lime Pie offers a delightful balance of tart citrus and creamy richness without the added sugar. Perfect for those watching their intake, it uses NutraSweet to deliver a classic flavor profile. The graham cracker crust provides a sturdy, crunchy base that contrasts beautifully with the smooth, gelatin-set filling. Ideal for summer gatherings, potlucks, or a light dinner party finale, this pie is easy to prepare and requires no baking. Its a guilt-free indulgence that satisfies sweet cravings while keeping things light and refreshing.

Ingredients

Directions

  1. Preheat oven to 350F (177C) (optional, if baking crust) or prepare a 7-inch springform pan for a no-bake crust.
  2. In a small bowl, combine graham cracker crumbs, melted margarine, and 2 tablespoons of NutraSweet Spoonful.
  3. Press the crumb mixture evenly onto the bottom and up the sides (about 1/2 inch) of the springform pan.
  4. If baking the crust, bake for 5-7 minutes until lightly golden, then let cool completely. If no-bake, chill crust in refrigerator for 15 minutes.
  5. In a small saucepan, sprinkle unflavored gelatin over 1/2 cup of the skim milk. Let stand for 2 to 3 minutes to bloom.
  6. Place the saucepan over low heat, stirring constantly, until the gelatin is completely dissolved. Remove from heat and let cool slightly.
  7. In a medium mixing bowl, beat the softened cream cheese until smooth and fluffy.
  8. Gradually beat in the remaining 1 1/4 cups of skim milk and the dissolved gelatin mixture until well combined.
  9. Stir in the fresh lime juice and the remaining 1/2 cup of NutraSweet Spoonful. Mix until uniform.
  10. Pour the filling into the prepared crust, smoothing the top with a spatula.
  11. Refrigerate the pie for at least 2 hours, or until the filling is firmly set.
  12. To serve, run a small spatula around the edge of the pan to loosen the pie. Carefully remove the side of the springform pan.
  13. Transfer the pie to a serving plate. Garnish with lime slices and fresh mint sprigs before slicing.
