Description

This hearty Lamb & White Bean Stew is the ultimate comfort food for chilly evenings. Ingredients

Directions

  1. Preheat the oven to 350F (175C).
  2. Trim any visible fat and gristle from the lamb stew meat and set aside.
  3. Heat 3 tablespoons of olive oil in a large oven-proof skillet or Dutch oven over medium-high heat.
  4. Brown the lamb pieces on all sides, working in batches to avoid crowding the pan.
  5. Remove the browned lamb with a slotted spoon and place it directly into the casserole dish or keep in the same oven-proof pot if using a Dutch oven.
  6. Add the remaining 3 tablespoons of olive oil to the pan, then saut the diced onions, sliced carrot, and minced garlic until the onions are translucent, about 5 minutes.
  7. Scrape the vegetable mixture into the pot with the lamb.
  8. Add the crushed tomatoes, thyme, rosemary, salt, pepper, parsley, dry red wine, and beef stock to the pot.
  9. Bring the liquid to a boil over medium-high heat on the stovetop.
  10. Cover the pot and place it in the center of the oven. Bake for 2 1/2 hours, or until the lamb begins to become tender.
  11. Stir in the cooked Great Northern beans, cover, and continue baking for an additional 30 to 40 minutes until the lamb is fork-tender and the flavors have melded.
