Directions
-
Preheat the oven to 350F (175C).
-
Trim any visible fat and gristle from the lamb stew meat and set aside.
-
Heat 3 tablespoons of olive oil in a large oven-proof skillet or Dutch oven over medium-high heat.
-
Brown the lamb pieces on all sides, working in batches to avoid crowding the pan.
-
Remove the browned lamb with a slotted spoon and place it directly into the casserole dish or keep in the same oven-proof pot if using a Dutch oven.
-
Add the remaining 3 tablespoons of olive oil to the pan, then saut the diced onions, sliced carrot, and minced garlic until the onions are translucent, about 5 minutes.
-
Scrape the vegetable mixture into the pot with the lamb.
-
Add the crushed tomatoes, thyme, rosemary, salt, pepper, parsley, dry red wine, and beef stock to the pot.
-
Bring the liquid to a boil over medium-high heat on the stovetop.
-
Cover the pot and place it in the center of the oven. Bake for 2 1/2 hours, or until the lamb begins to become tender.
-
Stir in the cooked Great Northern beans, cover, and continue baking for an additional 30 to 40 minutes until the lamb is fork-tender and the flavors have melded.
