Description

This Layer Banana Pudding is a comforting, no-bake dessert that balances rich, vanilla-infused custard with the natural sweetness of fresh bananas. The base is a silky smooth pudding made from brown sugar, butter, and egg yolks, creating a deep flavor profile that surpasses boxed mixes. Lightly folded whipped cream adds airiness, while the layering technique ensures every spoonful contains the perfect ratio of fruit, pudding, and cream. It is an ideal treat for potlucks, family gatherings, or a cozy evening dessert. The make-ahead nature of this dish allows the flavors to meld beautifully, making it even more delicious when served cold after chilling.

Ingredients

Directions

  1. In a medium saucepan, whisk together the flour and brown sugar until no lumps remain.
  2. Gradually whisk in the milk until the mixture is smooth.
  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and becomes bubbly.
  4. Continue to cook and stir for 1 minute more to ensure the flour is fully cooked.
  5. Remove the saucepan from the heat.
  6. In a separate bowl, gradually whisk about 1 cup of the hot pudding mixture into the beaten egg yolks to temper them.
  7. Pour the egg yolk mixture back into the saucepan with the remaining pudding, whisking constantly.
  8. Return the saucepan to low heat and bring to a gentle boil, stirring constantly for 2 minutes.
  9. Remove from the heat and stir in the butter and vanilla extract until melted and combined.
  10. Allow the pudding to cool to room temperature, stirring occasionally to prevent a skin from forming.
  11. Once cooled, gently fold in the whipped cream until just combined.
  12. Spoon one-third of the pudding into the bottom of a 2-quart glass bowl or individual serving dishes.
  13. Top with half of the sliced bananas.
  14. Repeat the layers with another third of the pudding and the remaining bananas.
  15. Top with the remaining pudding.
  16. Sprinkle with chopped walnuts if desired.
  17. Cover tightly with plastic wrap and refrigerate for at least 1 hour before serving.

Note

For best texture, slice the bananas just before assembling the pudding to prevent browning.

If you prefer a richer custard, you can increase the amount of egg yolks to 3 or 4.

This pudding can be made up to 24 hours in advance. Store covered in the refrigerator.

For a traditional Southern twist, add a layer of vanilla wafers between the pudding and banana layers.

Ensure the pudding is cooled to room temperature before folding in the whipped cream, or the cream may melt.
