Description

These Layered Chocolate Peanut Diamonds are the ultimate sweet treat for parties and dessert platters. The recipe features a crunchy, buttery peanut butter crust that provides a perfect base for a rich, custard-like filling packed with chopped peanuts. Topped with a layer of melted chocolate and extra crunch, these bars offer a delightful contrast of textures. They are easy to make in a single baking dish and can be cut into elegant diamond shapes or simple squares. Perfect for holiday gifts, bake sales, or satisfying a chocolate-peanut craving at home.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. Combine margarine (or butter) and peanut butter in a small bowl; beat with a mixer on medium to high speed for 30 seconds.
  3. Add about half of the flour and the brown sugar to the butter mixture; beat until combined.
  4. Beat in the remaining flour until a cohesive dough forms.
  5. Press the dough mixture evenly into the bottom of a 13x9 inch baking dish.
  6. Bake the crust for about 15 minutes, or until light golden brown.
  7. While crust bakes, combine cream cheese, honey, 2 tablespoons brown sugar, and 2 tablespoons flour in a mixer bowl; beat on medium speed until smooth and combined.
  8. Add eggs to the cream cheese mixture; beat just until combined.
  9. Stir in 1 cup of the chopped peanuts.
  10. Pour the filling over the hot baked crust.
  11. Bake for about 15 minutes more, or until the filling is set.
  12. Sprinkle chocolate chips over the hot filling.
  13. Return to oven and bake for 2 minutes, or until chocolate is softened.
  14. Remove from oven and place baking dish on a wire rack.
  15. Spread the melted chocolate evenly over the top.
  16. Sprinkle with the remaining 1/2 cup chopped peanuts.
  17. Cool thoroughly on the wire rack before cutting.
  18. Cut into diamond shapes or bars.

Note

Storage: Store leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze these bars for up to 3 months; thaw in the refrigerator before serving.

Ingredient Substitutions: You can use regular butter instead of margarine for a richer flavor. Dark or semi-sweet chocolate chips work best, but milk chocolate chips can be used for a sweeter taste.

Tips: Ensure the cream cheese is fully softened to avoid lumps in the filling. Press the crust firmly into the pan to prevent it from crumbling when cut.
