Description

These Lemon Butter Wafers are a sophisticated yet simple treat that balances rich, creamy butter with the zesty brightness of fresh lemon. The addition of ground almonds provides a subtle nutty flavor and a tender, melt-in-your-mouth texture. Perfect for afternoon tea or as an elegant addition to a dessert platter, these cookies hold their shape beautifully while offering a delicate crunch. They are wonderfully versatile, pairing well with coffee, tea, or even a glass of dessert wine. Make them for a special gathering or enjoy them as a comforting homemade indulgence. The key is to chill the dough thoroughly to ensure the wafers bake evenly and develop those coveted golden edges.

Ingredients

Directions

  1. In the large bowl of an electric mixer, beat the butter until smooth.
  2. Add the sugar and beat until creamy.
  3. Beat in the eggs one at a time, scraping down the sides of the bowl as needed.
  4. Add the sifted flour and beat just until combined.
  5. Stir in the finely minced lemon zest and ground almonds until well incorporated.
  6. Cover the bowl with plastic wrap and refrigerate the dough for at least 3 hours until well chilled.
  7. Preheat the oven to 350&# 194;°F (175ðC).
  8. Butter a nonstick cookie sheet or line it with parchment paper.
  9. Using a 1/2 tablespoon measure, spoon level portions of chilled dough onto the cookie sheet, placing them 3 inches apart.
  10. Bake for about 10 minutes, or until the cookies have just flattened and are lightly browned around the edges.
  11. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to wire racks to cool completely.

Note

Store the cooled wafers in an airtight tin or container to maintain their crispness.

Ensure the lemon zest is finely minced to distribute the flavor evenly and avoid large bitter chunks.

The dough must be well-chilled before baking; this helps the wafers hold their shape and prevents excessive spreading.
