  1. Pat the boneless chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  2. Heat olive oil and 1 1/2 tablespoons of butter in a heavy skillet over medium-high heat until the butter melts and the oil is hot but not smoking.
  3. Brown the chicken breasts in two batches, cooking for about 3-4 minutes per side until golden brown, then transfer to a plate.
  4. Discard all but 1 tablespoon of fat from the skillet.
  5. Add the sliced onion and mushrooms to the skillet, sautéing occasionally until the mushrooms have released their liquid and it has evaporated.
  6. Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan, and cook until the wine is almost fully evaporated.
  7. Add the chicken broth and return the chicken to the skillet along with any accumulated juices.
  8. Simmer the chicken, turning once halfway through, until cooked through, about 15 minutes.
  9. Transfer the cooked chicken to a serving platter.
  10. Continue simmering the mushroom sauce until it reduces to about 1/2 cup and thickens slightly.
  11. Remove the skillet from heat and stir in the remaining 2 tablespoons of butter until melted and incorporated.
  12. Season the sauce with additional salt and pepper to taste.
  13. Spoon the mushroom sauce over the chicken, sprinkle with minced fresh parsley, and serve immediately.
