  1. Rinse the dried lentils and place them in the slow cooker.
  2. Add 5 cups of cold water to the lentils and cook on low for 8-10 hours (or overnight).
  3. Add the diced vegetables, oil, parsley, bay leaf, pepper, thyme, and tarragon to the slow cooker.
  4. Add enough cold water to cover the vegetables, leaving about 3 inches of space below the top of the pot.
  5. Cook on low for 5 hours.
  6. Gently add the cod fillet pieces to the pot, ensuring they are completely submerged in the liquid.
  7. Cook on low for another 4 to 5 hours until the fish is flaky and tender.
  8. Remove the bay leaf and stir in the orange juice just before serving.
