  1. Place the large hen in a large pot, cover with water, and bring to a boil.
  2. Reduce heat and simmer the chicken until it is tender and easily falls off the bone.
  3. Remove the chicken from the broth and set aside to cool slightly.
  4. Strain the broth, skim off the fat, and reserve both the fat and the liquid.
  5. Debone the chicken meat and shred or chop it into bite-sized pieces.
  6. In a large skillet or saucepan, heat the reserved chicken fat over medium heat.
  7. Add diced celery, chopped onion, bell peppers, diced mushrooms, and minced garlic.
  8. Saut&# 195;© the vegetables until softened and fragrant.
  9. Stir in the whole tomatoes (crushed) and enough reserved broth to create a thick sauce.
  10. Simmer the sauce for about 1 to 2 hours, adding more broth if needed, until flavors meld.
