Description

These Lollipop Sugar Cookies are a nostalgic treat that combines the simplicity of drop sugar cookies with the fun of a handheld snack. Made with a classic blend of Crisco, sugar, and vanilla, these cookies offer a tender, slightly crumbly texture that holds up beautifully to various toppings. The dough is chilled to ensure the cookies keep their shape during baking, resulting in a soft interior with a lightly crisp edge. Perfect for children's parties, holiday gatherings, or as a sweet afternoon pick-me-up, these cookies are endlessly customizable.

Directions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or leave ungreased as per preference.
  2. In a large bowl, cream the Butter Flavor Crisco, sugar, milk, and vanilla together using an electric mixer on medium speed until the mixture is light and well blended.
  3. Beat in the egg until fully incorporated and the mixture is smooth.
  4. In a separate small bowl, combine the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Cover the bowl with plastic wrap and refrigerate the dough for at least several hours, or overnight, until firm.
  7. Remove dough from the refrigerator. Shape the dough into 1 1/2-inch balls.
  8. Push a flat ice cream stick into the center of each dough ball, leaving enough stick protruding to use as a handle.
  9. Place the dough balls on the prepared baking sheet, sticks parallel, spacing them about 3 inches apart.
  10. Flatten each cookie to about 1/2 inch thickness using a large, smooth spatula that has been greased and lightly floured.
  11. Decorate the cookies by pressing in desired toppings such as baking chips, raisins, dried fruit, coconut, nuts, or colored sugar before baking.
  12. Bake for 8 to 10 minutes, or until the edges are lightly golden. Avoid overbaking to keep them tender.
  13. Allow cookies to cool on the baking sheet for 2 minutes before carefully removing them to a cooling rack to cool completely.
