Description

This Make-It-Easy Beef Potpie is a comforting, one-skillet dinner perfect for busy weeknights. Tender strips of beef sirloin are stir-fried and combined with savory gravy, mushrooms, onions, and frozen peas and carrots. The rich filling is topped with a ring of golden, flaky crescent rolls that bake to a buttery crisp. It offers the classic taste of a homemade potpie with half the effort. Serve warm for a satisfying meal that the whole family will love.

Ingredients

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Trim fat from steak.
  3. Halve steak lengthwise, then cut crosswise into 1/4 inch thick strips.
  4. In a large ovenproof skillet, heat vegetable oil over medium-high heat until hot.
  5. Add beef in 2 batches and stir-fry 1 to 2 minutes, until outside surface is no longer pink.
  6. Do not overcook the beef; remove from skillet with a slotted spoon and set aside.
  7. In the same skillet, cook mushrooms, onion, garlic, and 1/4 cup water, stirring frequently for 3 minutes, until onion is tender.
  8. Stir in beef gravy, frozen peas and carrots, and dried thyme.
  9. Bring mixture to a boil; remove from heat.
  10. Stir in reserved beef.
  11. Separate crescent rolls into 8 triangles.
  12. Starting from wide ends, roll up triangles halfway.
  13. Arrange rolls over beef mixture so pointed ends are directed toward the center.
  14. Bake 17 to 19 minutes, until crescent rolls are deep golden brown.
