Mandu Tuikim (Korean Fried Dumplings)
Description
Crispy on the outside and tender on the inside, these Mandu Tuikim are the ultimate Korean comfort food. The filling combines lean ground beef with finely chopped cabbage and onion, seasoned simply with soy sauce and pepper for a clean, savory flavor profile. Boiling the dumplings first ensures the meat is cooked through and the wrapper is pliable, while the subsequent pan-fry adds a delightful crunch and rich aroma. Serve them hot with a tangy soy-vinegar dipping sauce to cut through the richness.Ingredients
Directions
-
Finely chop the cabbage and onion.
-
Place the chopped cabbage and onion in a pot of boiling water and cook until tender, about 5-7 minutes.
-
Drain the vegetables and transfer them to a cheesecloth or fine-mesh strainer. Squeeze firmly to remove as much moisture as possible.
-
In a large bowl, combine the squeezed cabbage and onion mixture with the lean ground beef, one whole egg, 1 tablespoon of flour, 1 tablespoon of soy sauce, and salt and pepper to taste. Mix thoroughly until well combined.
-
Separate one egg, reserving the white for sealing. Beat the egg white lightly.
-
Open the package of wonton skins. Keep them covered with a damp cloth to prevent drying. Take one skin at a time.
-
Place a small spoonful of the beef mixture in the center of the wonton skin.
-
Dip your finger in the egg white and wet two adjacent edges of the square skin.
-
Fold the skin diagonally to form a triangle, pressing the edges firmly to seal and remove any air pockets.
-
Repeat the process with the remaining filling and skins.
-
Bring a large pot of water to a boil. Gently drop the dumplings into the boiling water.
-
Cook the dumplings until they float to the surface, then continue to boil for exactly 1 minute.
-
Remove the dumplings from the water with a slotted spoon and place them on a wire rack or baking sheet lined with parchment paper.
-
Allow the dumplings to dry completely until the skins are no longer sticky to the touch. Use a fan to speed up drying if necessary.
-
Heat 1/4 cup of vegetable oil in a large skillet over medium heat.
-
Carefully place the dried dumplings in the hot oil in a single layer. Work in batches if necessary to avoid overcrowding.
-
Fry the dumplings, turning occasionally, until they are golden brown and crispy on all sides.
-
Remove from the pan and drain on paper towels.
-
Serve hot with dipping sauce.
