Description

This unique twist on classic manicotti combines the richness of baked pasta with the healthy fats of salmon. The filling is a light yet satisfying blend of cottage cheese, fresh spinach, and aromatic herbs, offering a creamy texture that holds up well against the pasta. The topping is a vibrant, pink-hued sauce made from flaked salmon, condensed cream of celery soup, and yogurt, creating a savory and slightly tangy finish. It's a comforting, home-style meal that feels elegant enough for a dinner party but simple enough for a busy weeknight.

Directions

  1. Preheat the oven to 350°F (175°C). Lightly grease a baking dish large enough to hold the manicotti noodles.
  2. Cook the manicotti noodles according to package directions until al dente. Drain and rinse briefly with cool water to prevent sticking.
  3. In a small bowl, combine the flaked salmon, condensed cream of celery soup, plain yogurt, and half of the chopped parsley. Mix well to create a smooth, creamy sauce. Set aside.
  4. In a skillet, melt the butter over medium heat. Add the chopped onion and crushed garlic, sautéing until the onion is translucent and soft, about 3-4 minutes.
  5. Stir in the cooked spinach, cottage cheese, basil, remaining parsley, salt, and pepper. Cook for another minute until the spinach is heated through and the mixture is well combined. Remove from heat.
  6. Fill each cooked manicotti noodle with approximately 1/3 cup of the spinach and cottage cheese mixture.
  7. Place the filled manicotti tubes seam-side down in the prepared baking dish.
  8. Spoon the salmon sauce evenly over the top of the manicotti, ensuring each tube is coated.
  9. Cover the baking dish with aluminum foil. Bake in the preheated oven for 20 minutes, or until the pasta is tender and the sauce is bubbly.
  10. Let stand for 5 minutes before serving to allow the sauce to set slightly.
