Maple Buckeyes
Description
These Maple Buckeyes are a decadent twist on the classic Southern fudge ball, combining creamy peanut butter with the distinct warmth of maple syrup. The mixture is rolled into bite-sized spheres and partially dipped in rich chocolate, leaving a peek of peanut butter visible to resemble a buckeye nut. They offer a perfect balance of sweet and salty textures, making them an ideal treat for holidays, potlucks, or simply as a luxurious afternoon snack. The addition of maple syrup adds depth and complexity compared to traditional sugar-based recipes. Easy to make and always a crowd-pleaser, these no-bake treats require just a few simple ingredients and minimal effort to create a professional-looking dessert.Ingredients
Directions
-
In a heavy saucepan, combine the butter and maple syrup.
-
Cook over medium heat, stirring occasionally, until the mixture reaches 232&# 194;°F (111ðC) (soft-ball stage) on a candy thermometer.
-
Remove the saucepan from the heat just before the temperature drops significantly.
-
Add the chunky peanut butter to the hot mixture but do not stir it in yet.
-
Allow the mixture to cool until it is safe to handle but still pliable.
-
Beat the mixture with an electric mixer until it begins to grain and thickens.
-
Switch to mixing by hand to finish combining the peanut butter fully.
-
Roll the mixture into small balls, approximately 1 inch in diameter.
-
Melt the chocolate chips and cake paraffin together in a heatproof bowl set over a pot of simmering water (double boiler method).
-
Insert a toothpick into the center of each peanut butter ball.
-
Dip the bottom half of each ball into the melted chocolate mixture.
-
Place the dipped balls on a sheet of wax paper or parchment paper to drain and set.
-
Once the chocolate has set slightly, gently depress the top of each buckeye with your finger to smooth the surface and cover the toothpick hole.
-
Allow to cool completely before serving or storing.

Note
Use a candy thermometer for accuracy when cooking the maple syrup and butter mixture. The soft-ball stage (232ðF-238ðF) is crucial for the fudge texture.
If you do not have cake paraffin, you can omit it, but the chocolate may not set as hard or glossy. Alternatively, use a small amount of shortening or coconut oil to thin the chocolate if it becomes too thick.
Store the buckeyes in an airtight container at room temperature for up to 1 week, or in the refrigerator for up to 2 weeks. Bring to room temperature before serving for the best texture.
For easier handling, you can chill the peanut butter balls in the refrigerator for 15 minutes before dipping them in chocolate.
