Directions

  1. Poach cod fillets in a small amount of salted water for about 2 minutes, or longer if frozen, until just opaque; drain and carefully remove any bones.
  2. In a large saucepan, melt butter over medium heat.
  3. Add chopped onion, green pepper, celery, garlic, green onion, and parsley to the saucepan and sauté until vegetables are tender.
  4. Stir in tomato soup, tomato sauce, chili sauce, water, drained mushrooms, and Worcestershire sauce.
  5. Add salt, oregano, basil, white pepper, bay leaf, and sugar to the sauce mixture.
  6. Bring the sauce to a boil, then reduce heat and simmer for 1 hour, stirring occasionally.
  7. Meanwhile, cook lasagne noodles in a large pot of salted boiling water until tender but firm; drain well.
  8. Preheat oven to 375°F (190°C).
  9. Grease a 13x9 inch ovenproof dish or individual baking dishes.
  10. Spread a thin layer of sauce on the bottom of the dish.
  11. Arrange a layer of noodles, then a layer of sauce, followed by another layer of noodles.
  12. Break the poached cod into pieces and spread evenly over the noodles.
  13. Cover the fish with sauce, then add a final layer of noodles and top with remaining sauce.
  14. Sprinkle shredded mozzarella cheese evenly over the top.
  15. Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
