Description

This Middle-Eastern appetizer features Chick peas, Garlic cloves, minced, Onion, minced. It delivers aromatic, well-seasoned taste. Ideal for parties, potlucks, or as a starter before the main course. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.

  1. Several dashes tabasco 3 tb Wholewheat flour Salt & pepper 1/4 c Parsley, minced Stock, as needed
  2. Soak chick peas, rinse well,
  3. cover with fresh water, bring to a
  4. boil &
  5. simmer until very tender.
  6. Depending on how fresh the chick peas are will determine how long this will take.
  7. Give them about 1 1/2 hours.
  8. Drain well & set aside to cool.
  9. When cool, place chick peas in food processor bowl & blend until very smooth.
  10. If you have a large enough bowl,
  11. add the
  12. rest of the ingredients, except the stock, &
  13. mix in the blender.
  14. If the bowl is not large enough, you will have to do this in batches.
  15. Then add the ingredients in order, mixing well after each addition.
  16. Add a little stock if the mixture appears too dry or looks as if it is not going to hold together very well.
  17. Cover & set aside for 30 minutes.
  18. Shape into patties.
  19. If the patties do not hold together very well, you may want to
  20. add a little more flour, but be careful, you do not want to
  21. make them too floury.
  22. Place on a lightly oiled baking sheet & gently flatten.
