Directions

Dry the blanched almonds thoroughly, then grind them into a fine powder.

Combine the ground almonds, confectioners' sugar, egg white and just enough rosewater or orangewater to form a stiff but pliable dough.

Knead the dough until smooth.

Dust a work surface with confectioners' sugar and shape the marzipan into fruit, flowers, animals or other desired forms.

Tint with food coloring if desired.

Decorate with colored sugar or chocolate as desired.

If the dough becomes too stiff, knead in a few drops of lemon juice, rosewater or orangewater.

Allow the shaped candies to dry in a cool, airy place for 24 hours.

Store in an airtight container once completely dry.
