Description

This luxurious mascarpone panna cotta offers a velvety, smooth texture that is far richer than traditional recipes. By incorporating mascarpone and sour cream into the base, the dessert gains a delightful tanginess that balances the sweetness of the cream. The accompanying frozen mixed berry compote adds a bright, fruity contrast that cuts through the richness. Perfect for elegant dinner parties or special celebrations, this make-ahead dessert allows the flavors to meld beautifully while chilling. It is an impressive yet straightforward way to bring a touch of Italian sophistication to your table.

Ingredients

Directions

  1. Place frozen mixed berries in a small bowl and crush slightly with the back of a spoon.
  2. Stir 3 tablespoons of sugar into the crushed berries, cover with plastic wrap, and set aside to macerate.
  3. Spray six 3/4 cup ramekins with vegetable cooking spray.
  4. In a small bowl, pour 1 tablespoon of milk and sprinkle the gelatin over it. Let it stand for 10 minutes to soften.
  5. Meanwhile, combine whipping cream, 1/3 cup milk, vanilla extract, and 1/4 cup sugar in a saucepan.
  6. Bring the cream mixture to a boil over medium-high heat, stirring often.
  7. Remove the saucepan from heat and stir in the softened gelatin mixture until completely melted.
  8. Let the cream mixture cool slightly for a few minutes.
  9. In a medium bowl, whisk together mascarpone cheese and sour cream until smooth.
  10. Slowly pour the hot cream mixture into the mascarpone bowl, whisking constantly to combine without curdling.
  11. Pour the panna cotta mixture evenly into the prepared ramekins.
  12. Refrigerate for at least 3 hours, or up to 12 hours, until cold and set.
  13. To serve, run a small knife around the edge of each ramekin to loosen the panna cotta.
  14. If necessary, dip the bottom of each ramekin in hot water for a few seconds to help release.
  15. Invert the ramekins onto plates.
  16. Spoon the berry compote over the panna cotta and serve immediately.

Note

Chilling Time: The panna cotta must chill for at least 3 hours to set properly. For best texture and ease of unmolding, chilling for 4-6 hours is recommended.

Unmolding Tip: If the panna cotta sticks, do not force it. A quick dip in hot water helps loosen the edges. Ensure the ramekins are well-greased before pouring.

Variations: You can substitute the mixed berries with strawberries, raspberries, or a lemon curd topping for a different flavor profile.

Storage: Store leftover panna cotta in the refrigerator for up to 3 days. Keep the berry topping separate until serving to prevent sogginess.
