It is an impressive yet straightforward way to bring a touch of Italian sophistication to your table.Ingredients
Directions
-
Place frozen mixed berries in a small bowl and crush slightly with the back of a spoon.
-
Stir 3 tablespoons of sugar into the crushed berries, cover with plastic wrap, and set aside to macerate.
-
Spray six 3/4 cup ramekins with vegetable cooking spray.
-
In a small bowl, pour 1 tablespoon of milk and sprinkle the gelatin over it. Let it stand for 10 minutes to soften.
-
Meanwhile, combine whipping cream, 1/3 cup milk, vanilla extract, and 1/4 cup sugar in a saucepan.
-
Bring the cream mixture to a boil over medium-high heat, stirring often.
-
Remove the saucepan from heat and stir in the softened gelatin mixture until completely melted.
-
Let the cream mixture cool slightly for a few minutes.
-
In a medium bowl, whisk together mascarpone cheese and sour cream until smooth.
-
Slowly pour the hot cream mixture into the mascarpone bowl, whisking constantly to combine without curdling.
-
Pour the panna cotta mixture evenly into the prepared ramekins.
-
Refrigerate for at least 3 hours, or up to 12 hours, until cold and set.
-
To serve, run a small knife around the edge of each ramekin to loosen the panna cotta.
-
If necessary, dip the bottom of each ramekin in hot water for a few seconds to help release.
-
Invert the ramekins onto plates.
-
Spoon the berry compote over the panna cotta and serve immediately.

Note
Chilling Time: The panna cotta must chill for at least 3 hours to set properly. For best texture and ease of unmolding, chilling for 4-6 hours is recommended.
Unmolding Tip: If the panna cotta sticks, do not force it. A quick dip in hot water helps loosen the edges. Ensure the ramekins are well-greased before pouring.
Variations: You can substitute the mixed berries with strawberries, raspberries, or a lemon curd topping for a different flavor profile.
Storage: Store leftover panna cotta in the refrigerator for up to 3 days. Keep the berry topping separate until serving to prevent sogginess.
