Description

These melt-in-your-mouth rolls are the ultimate comfort food, featuring a rich dough made with milk, eggs, and shortening for maximum tenderness. The result is a bread that is incredibly soft, slightly sweet, and perfectly buttery. They rise beautifully to create a pillowy texture that disappears with every bite. Ideal for holiday dinners, Sunday suppers, or simply to enjoy warm with butter and jam, these rolls bring a homemade warmth to any table. While they require a bit of time for rising, the simple mixing and kneading process makes them accessible for bakers of all skill levels. Serve them fresh from the oven for the best experience, as they pair wonderfully with soups, stews, or roasted meats.

Ingredients

Directions

  1. Scald the milk in a saucepan until steam rises, then remove from heat.
  2. Pour the hot milk over the shortening, sugar, and salt in a large mixing bowl to melt the shortening.
  3. Allow the milk mixture to cool until it is lukewarm to the touch (approximately 110F).
  4. In a separate small bowl, sprinkle the yeast over lukewarm water and stir to dissolve completely.
  5. Add the yeast mixture, 3 cups of the sifted flour, and eggs to the cooled milk mixture.
  6. Beat with an electric mixer on medium speed for about 2 minutes until smooth.
  7. Gradually stir in enough of the remaining flour to form a soft, pliable dough.
  8. Turn the dough out onto a lightly floured surface.
  9. Knead the dough until it is smooth, elastic, and satiny, about 8 to 10 minutes.
  10. Place the dough in a lightly greased bowl, turning once to coat the top with grease, and cover.
  11. Let the dough rise in a warm place until doubled in size, about 1 hour.
  12. Punch the dough down to release air bubbles.
  13. Divide the dough into three equal portions and let them rest for 10 minutes.
  14. Divide each portion into 12 equal pieces, then shape each piece into a smooth ball.
  15. Place 12 balls, equally spaced, in a greased 9-inch round cake pan.
  16. Repeat this process for the remaining two portions of dough in separate greased pans.
  17. Cover the pans and let the rolls rise until doubled in size, 45 to 60 minutes.
  18. Preheat the oven to 400F (200C).
  19. Bake the rolls for 12 to 15 minutes, or until they are golden brown and sound hollow when tapped.
  20. Remove the rolls from the pans and cool on wire racks before serving.

Note

Ensure the milk mixture is cooled to lukewarm (110F) before adding yeast and eggs to prevent killing the yeast or cooking the eggs.

For best results, use active dry yeast and check the expiration date. If using instant yeast, you can mix it directly with the flour.

The dough should be soft but not sticky. Add flour gradually during mixing to achieve the right consistency.

Allow the shaped rolls to rise fully before baking for maximum fluffiness. They should feel jiggly when gently shaken.

These rolls freeze well. Wrap tightly in plastic wrap and foil, then freeze for up to 3 months. Thaw at room temperature and warm in the oven before serving.
