Description

These Melt-In-Your-Mouth Rolls are the ultimate comfort food side dish, perfect for holiday dinners, Sunday suppers, or any occasion where you want to impress your guests with homemade bread. Enriched with milk, eggs, and shortening, these rolls boast an incredibly soft, pillowy texture that practically dissolves on the tongue. The subtle sweetness from the sugar complements savory mains beautifully, while the golden-brown crust provides a delightful contrast to the fluffy interior. Made with simple pantry staples like unbleached flour and active dry yeast, this recipe is forgiving for beginners yet rewarding enough for experienced bakers.

Directions

  1. In a medium saucepan, heat the milk until it just begins to scald (small bubbles form around the edges), then remove from heat.
  2. Pour the hot milk over the shortening, sugar, and salt in a large mixing bowl, stirring until the shortening is melted and ingredients are dissolved.
  3. Allow the milk mixture to cool until it is lukewarm (approximately 110°F), so it does not kill the yeast.
  4. In a small bowl, sprinkle the yeast over the lukewarm water and stir gently to dissolve; let stand for 5 minutes until foamy.
  5. Add the yeast mixture, beaten eggs, and 3 cups of the flour to the milk mixture.
  6. Beat with an electric mixer on medium speed for 2 minutes until the batter is smooth.
  7. Gradually stir in enough of the remaining flour to form a soft dough that pulls away from the sides of the bowl.
  8. Turn the dough out onto a lightly floured surface.
  9. Knead the dough for 8 to 10 minutes until it is smooth, elastic, and satiny to the touch.
  10. Place the dough in a lightly greased bowl, turning once to coat the top with oil or grease, and cover with a damp cloth or plastic wrap.
  11. Let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
  12. Punch the dough down to release air bubbles.
  13. Divide the dough into three equal portions; let them rest for 10 minutes to relax the gluten.
  14. Divide each portion into 12 equal pieces and shape each piece into a smooth ball.
  15. Place 12 balls, equally spaced, in a greased 9-inch round cake pan.
  16. Repeat the process with the remaining two portions of dough in additional greased pans.
  17. Cover the pans loosely and let the rolls rise until doubled in size, about 45 to 60 minutes.
  18. Preheat oven to 400°F (200°C).
  19. Bake the rolls for 12 to 15 minutes, or until they are golden brown on top and sound hollow when tapped.
  20. Remove the rolls from the pans immediately and cool on wire racks.
