Meltaways
Description
These Meltaways are the epitome of old-fashioned holiday treats. Soft, rich, and incredibly tender, they dissolve on the tongue, hence the name. The dough is simple, relying on high-quality butter and flour to create a crumbly, shortbread-like texture. The real star is the browned butter frosting, which adds a deep, nutty complexity that elevates these cookies from simple to spectacular. Topped with chopped pecans for a pleasant crunch, they are perfect for cookie exchanges, afternoon tea, or as a sweet gift. They pair beautifully with coffee or tea and always disappear quickly from the plate.Ingredients
Directions
-
Preheat oven to 350F (175C).
-
In a large mixing bowl, beat the 3/4 cup butter until soft and creamy.
-
Add the packed brown sugar and beat until the mixture is light and fluffy.
-
Beat in the egg yolk and 1/2 tsp vanilla extract until well combined.
-
Gradually add the all-purpose flour, beating just until the dough comes together and is well mixed.
-
If the dough is too soft to handle, cover and chill in the refrigerator for 30 minutes until firm enough to shape.
-
Roll the dough into 1-inch balls.
-
Place the balls 2 inches apart on ungreased cookie sheets.
-
Flatten each ball with the bottom of a glass that has been dipped in granulated sugar.
-
Bake for 7 to 9 minutes, or until the edges are just starting to turn golden.
-
Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
-
While cookies cool, make the frosting: In a saucepan, heat 1/4 cup butter over low heat until it foams and turns a light nutty brown.
-
Remove the browned butter from heat immediately.
-
Stir in the sifted powdered sugar, 1/2 tsp vanilla, and 2 to 3 tablespoons of milk until smooth and spreadable.
-
Frost the cooled cookies with the browned butter frosting.
-
Sprinkle with chopped pecans, gently pressing them into the frosting.
