Description

These meatless cabbage rolls, known as Mihshi Malfuf, offer a hearty and comforting meal that is both nutritious and delicious. The filling combines fluffy long-grain rice with protein-rich chickpeas, fresh parsley, and warm allspice, creating a satisfying texture without the need for meat. Simmered slowly in olive oil, the cabbage leaves become tender while absorbing the aromatic flavors of the stuffing. This dish is perfect for vegetarian dinners, family gatherings, or as a make-ahead meal that tastes even better the next day. Serve warm or at room temperature for a light yet fulfilling experience.

Ingredients

Directions

  1. Prepare the cabbage by removing tough outer leaves and par-boiling the remaining leaves in salted water until limp and pliable, about 3-5 minutes. Drain and set aside.
  2. In a large bowl, combine the long grain rice, drained chickpeas, finely chopped parsley, ground allspice, salt, and freshly ground black pepper. Mix well to create the stuffing mixture.
  3. Trim the thick central rib from each cabbage leaf to make rolling easier. If leaves are very large, cut them in half vertically.
  4. Place a tablespoon of the rice-chickpea mixture near the stem end of each leaf. Fold the sides over the filling and roll up tightly to form a neat cylinder.
  5. Line the bottom of a deep pot with any torn cabbage leaves or ribs. Pack the rolled cabbage tightly into the pot in a single layer, ensuring they are snug against each other.
  6. In a small bowl, crush garlic cloves with a pinch of salt, then mix with dried mint, lemon juice, and the remaining olive oil.
  7. Pour the garlic-lemon oil mixture over the cabbage rolls. Add enough water to just cover the rolls. Place a heat-proof plate upside down on top of the rolls to keep them submerged and intact.
  8. Bring the pot to a boil over medium heat, then reduce to low. Cover and simmer gently for 45 minutes, or until the rice is cooked and the cabbage is tender.
  9. Remove from heat and let the rolls rest for 30 minutes before serving. Serve lukewarm or cold, drizzled with extra olive oil if desired.
