Ingredients

Directions

  1. Trim stems and stalks from the mixed greens, then wash the leaves thoroughly.
  2. Place the greens in a steamer basket, arranging tougher greens like kale or chard at the bottom and delicate greens on top.
  3. Cover and steam until the greens are tender, about 10 minutes. Alternatively, cook each type of green separately in boiling, salted water until done.
  4. Transfer the cooked greens to a colander to cool slightly, then squeeze out excess liquid and chop roughly.
  5. In a mortar, pound the garlic cloves and 1/2 teaspoon salt until finely broken down.
  6. Add the chopped parsley and cilantro to the garlic paste and continue working until a rough paste forms. Alternatively, pulse these ingredients in a food processor until combined, adding a little olive oil if needed.
  7. In a large skillet, warm the olive oil over medium heat with the paprika and cumin until fragrant.
  8. Stir in the herb paste and mix well to combine.
  9. Add the chopped greens to the skillet and cook for 1-2 minutes, stirring frequently, until any remaining excess moisture has evaporated.
  10. Taste and adjust seasoning with additional salt if necessary.
  11. Transfer the greens to a serving dish and garnish with lemon wedges before serving.

Note

Storage: This dish is best served warm or at room temperature. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan or microwave before serving.

Green Varieties: Feel free to customize the mix of greens based on your preference or what is available at the market. A combination of tender and sturdy greens works best to maintain texture.

Herb Substitutions: If fresh cilantro or parsley is unavailable, you can use fresh mint or basil for a different flavor profile. Dried herbs can be used but should be added to the oil with the spices to rehydrate slightly.

Cooking Tip: Do not overcook the greens, as they will become mushy. The goal is tender but still vibrant greens.
