  1. Bring a large pot of water to a boil. Cook the Chinese egg noodles according to package instructions until tender but still firm (al dente). Drain and rinse briefly with cold water to stop cooking; set aside.
  2. While noodles cook, prepare the vegetables. Slice mushrooms, shred cabbage, cut scallions into matchsticks, and trim bean sprouts. Slice the chicken into thin strips.
