Description

This classic home-style roast beef delivers deep, savory flavors with every bite. The eye of round is browned to seal in juices, then slow-simmered in a fragrant mixture of brewed coffee, onions, garlic, and dried herbs. The coffee not only tenderizes the meat but adds a subtle richness to the resulting gravy. After two and a half hours of gentle cooking, the beef becomes fork-tender and easy to slice. The pan drippings are transformed into a smooth, flavorful gravy using a simple flour slurry. Perfect for Sunday dinners, holiday gatherings, or when you need a hearty, satisfying meal that feels like a warm hug. It pairs beautifully with mashed potatoes, roasted root vegetables, or simple green beans.

Ingredients

Directions

  1. Heat the cooking oil in a Dutch oven or heavy pot over medium-high heat.
  2. Pat the beef roast dry and brown it on all sides until golden brown.
  3. Add the chopped onion to the pot and cook until softened and transparent.
  4. Stir in the brewed coffee, 3/4 cup of the water, bouillon cube, basil, rosemary, garlic, salt, and pepper.
  5. Bring the mixture to a simmer, then cover the pot and reduce heat to low.
  6. Simmer gently for 2 to 2.5 hours, or until the beef is fork-tender.
  7. Remove the roast from the pot and let it rest on a cutting board.
  8. In a small bowl, whisk together the all-purpose flour and the remaining 1/4 cup water until smooth.
  9. Stir the flour mixture into the pan juices and simmer, stirring constantly, until the gravy thickens and bubbles.
  10. Slice the roast against the grain and serve with the hot gravy.

Note

Allow the roast to rest for at least 10 minutes before slicing to keep the juices inside the meat.

For a richer gravy, you can use beef broth instead of water.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The gravy may thicken upon cooling; add a splash of water or broth to loosen when reheating.
