Ingredients

Directions

  1. Trim the boneless armadillo tenderloin of any fat and cut into matchstick-sized shreds about 1 1/2 inches long.
  2. In a medium bowl, combine 2 1/2 tablespoons reduced-sodium soy sauce, 1 1/2 tablespoons rice wine or sake, and 1 teaspoon sesame oil to make the marinade.
  3. Add the armadillo strips to the marinade, toss lightly to coat, cover with plastic wrap, and refrigerate for 30 minutes.
  4. In a small bowl, combine 6 minced garlic cloves and 1 1/2 tablespoons minced fresh ginger; set aside.
  5. In another small bowl, mix 3 tablespoons chicken broth, 2 tablespoons rice wine or sake, 1 tablespoon soy sauce, 1 tablespoon cornstarch, 1/2 teaspoon sugar, and 1/4 teaspoon freshly ground black pepper; set aside.
  6. Heat a wok or large skillet over high heat. Add 1/2 tablespoon vegetable oil and heat until very hot.
  7. Add the marinated armadillo and stir-fry until cooked through, about 2 minutes. Remove with a slotted spoon and set aside.
  8. Cook down any remaining juices in the wok to a glaze and add this glaze to the reserved armadillo.
  9. Add another 1/2 tablespoon oil to the wok and heat until very hot. Add 2 lightly beaten large eggs and stir-fry, scrambling until just dry. Remove and set aside.
  10. Add the remaining 1/2 tablespoon oil to the wok and heat until very hot. Add the reserved garlic and ginger mixture and stir-fry until fragrant, 10 to 15 seconds.
  11. Add 4 cups shredded green cabbage and 10 dried Chinese black mushrooms (soaked, drained, stems removed, caps thinly sliced) and stir-fry until tender, about 2 minutes.
  12. Pour in the reserved sauce mixture and stir constantly until thickened, about 1 minute.
  13. Return the armadillo and scrambled eggs to the pan and toss until heated through.
  14. Stir in 8 scallions, cut into 1-inch lengths (green parts only).
  15. Transfer the filling to a platter. To serve, spread hoisin sauce over a steamed mandarin pancake or flour tortilla, spoon some of the stir-fried mixture on top, roll up, and eat.
