No Bake Egg Cookie recipe image

This elegant no-bake dessert combines a silky, rich chocolate mousse with crunchy sesame seed caramel snaps. The mousse is made by gently melting dark chocolate with butter and folding it into whipped cream and a light egg-honey mixture, creating a smooth, airy texture that melts in your mouth. The accompanying “cookies” are actually sesame caramel snapssugar and sesame seeds cooked to a golden caramel, spread thin, and broken into irregular shards for a satisfying crunch. This dish offers a beautiful contrast of flavors and textures, balancing the deep sweetness of the chocolate with the nutty, toasty notes of the sesame. Perfect for entertaining or as a luxurious treat after a hearty meal, it requires no oven, making it an ideal choice for warmer weather or when you want to avoid heating up the kitchen.

Ingredients

Directions

  1. Set up a bain-marie by filling a saucepan with an inch of water and bringing it to a gentle simmer.
  2. Place the chopped dark chocolate and 2 1/2 ounces (70g) of butter in a heatproof bowl over the simmering water.
  3. Stir gently until the chocolate and butter are completely melted and smooth, then remove from heat.
  4. In a separate large bowl, whip the heavy cream until it forms soft peaks.
  5. In a third bowl, whisk the eggs and honey together until light and fluffy.
  6. Fold the whiskey into the egg mixture, then gently fold in the melted chocolate mixture.
  7. Carefully fold the whipped cream into the chocolate mixture in two additions, ensuring you maintain as much air as possible.
  8. Pour the mousse into chilled wine glasses or serving dishes and refrigerate for at least one hour to set.
  9. Meanwhile, combine the caster sugar and 8 tablespoons of water in a heavy-based pan over medium heat.
  10. Stir gently until the sugar dissolves, then stop stirring and let the syrup boil until it turns a light golden color.
  11. Stir in the sesame seeds and continue cooking until the caramel reaches a dark golden hue.
  12. Quickly pour the hot caramel mixture onto an oiled non-stick tray or a sheet of oiled tin foil.
  13. Use a palette knife to spread the caramel out to about 1/2-inch (0.5 cm) thickness, or thinner if desired.
  14. Allow the caramel to cool and harden for about 15 minutes.
  15. Break the hardened caramel sheet into irregular shards or "snaps."
  16. Serve the chilled chocolate mousse alongside the sesame caramel snaps.
