Ingredients

Directions

  1. Thinly slice 1 onion and set it aside for garnish.
  2. Cut the remaining onion into chunks.
  3. Puree the onion chunks, garlic, ginger, curry powder (or turmeric), and yogurt in a blender or food processor until smooth.
  4. If lacking a blender, grate the onion and ginger and mix thoroughly with the garlic, spices, and yogurt.
  5. Season the marinade mixture well with salt and pepper.
  6. Spoon the marinade over the chicken thighs, ensuring they are evenly coated on all sides.
  7. Cover the chicken and refrigerate for at least 1 hour, or up to 24 hours for deeper flavor.
  8. Heat oil in a large heavy-bottomed saucepan or flameproof casserole over medium heat.
  9. Add the reserved sliced onion, bay leaves, and cardamoms.
  10. Cook, stirring frequently, until the onions are deeply browned and caramelized, about 20 minutes.
  11. Use a slotted spoon to remove half of the browned onions and reserve them for garnish.
  12. Push the remaining onions to one side of the pan.
  13. Add the marinated chicken portions to the clear side of the pan, reserving the marinade juices.
  14. Brown the chicken on all sides until golden.
  15. Sprinkle the brown basmati rice into the pan, distributing it evenly between the chicken pieces.
  16. Tuck the cinnamon stick among the chicken.
  17. Pour the reserved marinade juices over the chicken and rice.
  18. Add 3 3/4 cups of water to the pan.
  19. Bring the liquid to a boil, then immediately reduce the heat to low.
  20. Cover the pan tightly with a lid.
  21. Simmer gently for 30-35 minutes, until the rice has absorbed the water and the chicken is tender.
  22. Transfer the biriani to a serving dish.
  23. Garnish with the reserved caramelized onions and fresh coriander.
  24. Serve with lemon wedges on the side for squeezing over the dish before eating.
