Directions
-
Singe the duck to remove any pin feathers, then wash thoroughly and pat dry inside and out.
-
Sprinkle the duck cavity and exterior with 2 teaspoons of salt, 1/2 teaspoon of pepper, paprika, and garlic powder.
-
In a separate bowl, combine the cooked medium noodles, chopped parsley, and beaten eggs. Mix well to coat the noodles.

If using duck giblets (liver, gizzard, heart), grind or finely chop them and add to the noodle mixture.

Heat chicken fat in a skillet over medium heat. Add diced onions and chopped mushrooms, and saut for 5 minutes until softened.
-
Fold the sauted onion and mushroom mixture into the noodle and egg mixture.
-
Stuff the duck cavity generously with the noodle mixture.
-
Truss the duck or fasten the opening with skewers to hold the stuffing in place.
-
Place the duck on a rack in a roasting pan.
-
Roast in a preheated 375F (190C) oven for 2 1/2 hours, or until the duck is tender and the skin is brown.
-
Turn the duck twice during the roasting time to ensure even browning.

Note
Allow the duck to rest for 15-20 minutes after roasting before carving to allow the juices to redistribute.
If you do not have chicken fat, you can substitute with butter or olive oil for sauting the vegetables.
Ensure the internal temperature of the duck reaches at least 165F (74C) in the thickest part of the thigh for food safety.
You can prepare the stuffing mixture a day in advance and refrigerate it until ready to stuff the duck.
