Norwegian Almond Muffins
Description
These Norwegian Almond Muffins are a delightful Scandinavian treat that combines the warmth of cardamom with the sweetness of cherry preserves. Lighter than traditional bread but richer than standard muffins, these yeast-risen delights feature a soft, airy crumb studded with savory-sweet notes. The cherry filling provides a juicy burst of flavor, while the toasted almond and sugar topping adds a satisfying crunch. Perfect for a cozy weekend brunch, an afternoon coffee break, or as a special gift for holidays.Ingredients
Directions
-
In the pan of a bread machine or a large bowl, combine bread flour, yeast, 1/4 cup sugar, salt, and ground cardamom.
-
Add warm water, warm milk, room-temperature egg, and softened butter. Mix until a smooth dough forms.
-
If using a bread machine, select the "DOUGH" cycle and run until complete. If mixing by hand, knead on a floured surface for 8-10 minutes until smooth and elastic.
-
Remove dough from the pan or bowl. Divide into 12 equal portions.
-
Roll each portion into a ball and place into well-greased muffin cups.
-
Cover the muffin pan and let the dough rise in a warm place for 30-45 minutes, or until almost doubled in size.
-
Preheat oven to 350°F (175°C).
-
Using your finger, make a small indentation in the center of each risen muffin.
-
Spoon about 1/2 teaspoon of cherry preserves into each indentation.
-
In a small bowl, mix sliced almonds with the remaining 1 tablespoon of sugar.
-
Sprinkle the almond-sugar mixture evenly over the top of each muffin.
-
Bake for 20 to 25 minutes, or until golden brown and cooked through.
-
Let muffins cool in the pan for 3 minutes, then remove to a wire rack to cool completely or serve warm.
