Lighter than traditional bread but richer than standard muffins, these yeast-risen delights feature a soft, airy crumb studded with savory-sweet notes. The cherry filling provides a juicy burst of flavor, while the toasted almond and sugar topping adds a satisfying crunch. Ingredients

Directions

  1. In the pan of a bread machine or a large bowl, combine bread flour, yeast, 1/4 cup sugar, salt, and ground cardamom.
  2. Add warm water, warm milk, room-temperature egg, and softened butter. Mix until a smooth dough forms.
  3. If using a bread machine, select the "DOUGH" cycle and run until complete. If mixing by hand, knead on a floured surface for 8-10 minutes until smooth and elastic.
  4. Remove dough from the pan or bowl. Divide into 12 equal portions.
  5. Roll each portion into a ball and place into well-greased muffin cups.
  6. Cover the muffin pan and let the dough rise in a warm place for 30-45 minutes, or until almost doubled in size.
  7. Using your finger, make a small indentation in the center of each risen muffin.
  8. Spoon about 1/2 teaspoon of cherry preserves into each indentation.
  9. In a small bowl, mix sliced almonds with the remaining 1 tablespoon of sugar.
  10. Sprinkle the almond-sugar mixture evenly over the top of each muffin.
  11. Bake for 20 to 25 minutes, or until golden brown and cooked through.
  12. Let muffins cool in the pan for 3 minutes, then remove to a wire rack to cool completely or serve warm.

Note

If you do not have a bread machine, you can mix and knead the dough by hand or with a stand mixer.

Ensure the water and milk are warm (around 80°F) to activate the yeast without killing it.

You can substitute cherry preserves with apricot, raspberry, or currant preserves for a different flavor profile.

Store leftovers in an airtight container at room temperature for up to 2 days, or freeze for longer storage.

Cardamom is key to the authentic Scandinavian flavor; do not skip it.
