Description

This comforting lamb and barley stew is a warming, rustic dish perfect for cold evenings. The stew combines tender chunks of stewing lamb with chewy pearl barley, simmered slowly to develop deep, rich flavors. Aromatics like onion, garlic, and a bouquet of celery and mint infuse the broth with a fresh, savory character, while saffron adds a subtle golden hue and earthy depth. Zucchini is added near the end to retain its texture and provide a gentle sweetness. The result is a satisfying, home-style meal that balances hearty protein with wholesome grains. It pairs beautifully with crusty bread for soaking up the flavorful broth. Ideal for family dinners or meal prep, this stew tastes even better the next day as the flavors meld together.

Ingredients

Directions

  1. Heat the cooking oil in a large heavy-bottomed pot or Dutch oven over medium heat.
  2. Add the coarsely chopped onions and sauté until soft and transparent, about 5-7 minutes.
  3. Add the stewing lamb and minced garlic to the pot, browning the meat on all sides.
  4. Sprinkle the cider vinegar over the meat and stir to deglaze the pan, scraping up any browned bits.
  5. Tie the chopped celery and fresh mint together in a square of cheesecloth to create a herb bundle.
  6. Add the herb bundle, diced tomatoes, barley, saffron, salt, and pepper to the pot.
  7. Pour in the boiling water, ensuring the ingredients are mostly submerged.
  8. Cover the pot and simmer gently for 1 1/2 hours, stirring occasionally.
  9. Remove the cheesecloth bundle containing the celery and mint.
  10. Add the sliced zucchini to the stew and continue simmering covered for another 30-45 minutes until the lamb is tender and the barley is cooked.
  11. Just before serving, stir in the chopped fresh dill and squeeze in the lemon juice.
  12. Taste and adjust seasoning with additional salt and pepper if needed.
  13. Serve hot, optionally topped with a soft-boiled egg or fresh herbs.

Note

The original recipe mentioned "2 lg Eggs" and "Juice of 1 lemon" in the ingredient list but did not specify when to add them. Eggs are often served on top of Vietnamese-style stews or poached in the broth; add them in the last 10 minutes of cooking if poaching, or serve separately.

Saffron should be steeped in a little warm water for 10 minutes before adding to release its color and flavor fully.

If using dried barley, ensure you have enough water as it absorbs liquid. Pearl barley cooks faster than hulled barley; adjust simmering time accordingly.

The stew will thicken as it cools. Add a splash of water or broth when reheating to reach desired consistency.

For a richer flavor, you can sear the lamb in batches to avoid overcrowding the pan.
