It is an excellent choice for weeknight dinners when you want bold, authentic flavors with minimal preparation time.Ingredients
Directions
-
Slice the flank steak across the grain into strips 1/4 inch thick and 2 to 3 inches long. Set aside.
-
Pound or grind the chilies, garlic, and onion to a coarse paste in a mortar or blender. Add a little oil if using a blender to aid grinding.
-
Heat a wok over high heat. Add the vegetable oil and swirl to coat the surface.
-
Add the chili-garlic-onion paste to the wok and stir-fry until it is light golden and fragrant.
-
Add the beef strips and stir-fry quickly until the meat is a uniform tan color. Do not overcook.
-
Add the fish sauce, sugar, and water. Stir to combine and simmer briefly until the sauce thickens slightly, adjusting with more water if needed to achieve about 1/2 to 3/4 cup of sauce.
-
Toss in the mint or basil leaves and stir gently until just wilted. Remove from heat immediately.
-
Arrange a single layer of lettuce leaves in a serving bowl and spoon the beef mixture over them. Serve immediately with steamed rice.
