Description

This vibrant Thai dish, known as Nue Gra Pao, delivers an intense burst of flavor with every bite. Tender flank steak is quickly stir-fried with a coarse paste of fiery serrano chilies, garlic, and onion, creating a rich, spicy base. The heat is balanced by the bright, cooling notes of fresh mint leaves and a touch of sweetness from granulated sugar. Fish sauce adds depth and saltiness, tying the elements together. Served over crisp lettuce leaves and accompanied by steamed rice, this meal is perfect for those who love bold, spicy flavors. It&# 226;€™s a quick weeknight dinner that feels special, bringing the authentic taste of Thailand to your home kitchen.

Ingredients

Directions

  1. Slice the beef across the grain into strips 1/4 inch thick and 2 to 3 inches long. Set aside.
  2. Pound or grind the chilies, garlic, and onion to a coarse paste in a mortar or blender. If using a blender, add 2 tablespoons of oil to aid in grinding.
  3. Heat a wok over high heat, add the remaining 1/4 cup of oil, and swirl it over the surface of the pan. (Do not add more oil if you have ground the chilies, onion, and garlic with oil.)
  4. Add the chili paste to the hot wok and stir-fry until it is light golden and fragrant.
  5. Add the beef strips and stir-fry until they are a uniform tan color. Do not overcook the beef.
  6. Add the fish sauce, sugar, water, and mint (or basil) leaves. Stir to combine.
  7. Adjust the consistency by adding more water if the sauce is too dry. There should be about 1/2 to 3/4 cup of sauce.
  8. Arrange a single layer of lettuce leaves in a serving bowl and spoon the beef mixture over them.
  9. Serve immediately with steamed rice.
