Directions
-
Peel the onions, cut them in half, and slice wafer-thin to yield approximately 12 cups.
-
In a large, heavy ovenproof casserole or deep skillet, melt the butter over medium heat.
-
Add the sliced onions and minced garlic, cooking and stirring frequently until the onions are wilted and begin to brown, about 10 minutes.
-
Season with salt and pepper, then transfer the casserole to the oven and bake for 15 minutes to continue caramelizing.
-
Remove from the oven and sprinkle the flour over the onion mixture, stirring to coat evenly.
-
Gradually add the water and white wine, scraping the bottom and sides to dissolve any browned bits.
-
Add the bay leaf and thyme sprig, then simmer uncovered for 30 minutes, stirring occasionally.
-
While the soup simmers, arrange the bread slices on a baking sheet and toast in the oven until brown and crisp.
-
Increase the oven temperature to 450F (230C).
-
Ladle the hot soup into 6 individual ovenproof bowls or one large tureen.
-
Top each portion with toasted bread slices, overlapping if using a large tureen.
-
Generously sprinkle the Gruyre and Parmesan cheese over the bread.
-
Place the bowls on a baking sheet to catch drips and bake for 10 minutes, or until the cheese is bubbly and browned.

Note
For deeper flavor, substitute half of the water with beef or chicken stock.
Ensure the onions are sliced uniformly for even caramelization.
If individual bowls are not ovenproof, ladle the soup into ovenproof dishes only for the final grating step.
Gruyre is traditional, but Emmental or Comt can also be used for a nutty flavor.
The soup can be prepared ahead of time and reheated before adding the bread and cheese topping.
