Ono Chicken Wings
Description
These Ono Chicken Wings offer a perfect balance of savory umami and tropical sweetness. Inspired by Hawaiian cuisine, the wings are marinated in a robust blend of soy sauce, pineapple juice, beer, and aromatic ginger and garlic. The result is tender, fall-off-the-bone chicken coated in a sticky, caramelized glaze that is both comforting and exciting. Ideal for game day gatherings, casual parties, or as a flavorful appetizer before dinner, these wings bring a distinct island flair to your table. The combination of brown sugar and soy sauce creates a rich, deep flavor profile that complements the natural savoriness of the chicken.Ingredients
Directions
-
Trim the small wing tips from each chicken wing and discard them.
-
Cut the remaining wing sections in half at the joint to create drumettes and flats.
-
In a large bowl, combine soy sauce, pineapple juice, minced garlic, minced onion, grated ginger, brown sugar, beer, and vegetable oil. Stir well until the sugar is completely dissolved.
-
Add the chicken wings to the marinade, ensuring every piece is thoroughly coated. Cover and refrigerate for several hours or overnight for best results.
-
Remove the wings from the marinade, reserving the liquid in a separate container.
-
Heat a large skillet over medium heat with a small amount of oil. Brown the chicken wings on all sides until golden, working in batches if necessary to avoid crowding.
-
Once browned, return all wings to the skillet (or use one large enough). Pour in 1/2 cup of the reserved marinade.
-
Cover the skillet, reduce heat to low, and simmer for 15 to 20 minutes, or until the chicken is cooked through and tender.
-
Stir occasionally, adding more marinade if the sauce reduces too quickly or the wings begin to stick.
-
Once cooked, increase heat slightly to allow the sauce to thicken and glaze the wings.
-
Transfer wings to a serving dish and sprinkle with toasted sesame seeds if desired.

Note
For best flavor, marinate the wings overnight. If short on time, a minimum of 2 hours is recommended.
You can cook these wings a day in advance. Store them in the refrigerator with some of the sauce. Reheat in an oven at 350F (175C) for 15-20 minutes, adding a splash of reserved marinade to keep them moist.
Serve hot in a chafing dish to keep the wings warm and the sauce fluid for parties.
Toasted sesame seeds add a nice nutty crunch and visual appeal, but are optional.
