Description

These Ono Chicken Wings offer a perfect balance of savory umami and tropical sweetness. Inspired by Hawaiian cuisine, the wings are marinated in a robust blend of soy sauce, pineapple juice, beer, and aromatic ginger and garlic. The result is tender, fall-off-the-bone chicken coated in a sticky, caramelized glaze that is both comforting and exciting. Ideal for game day gatherings, casual parties, or as a flavorful appetizer before dinner, these wings bring a distinct island flair to your table. The combination of brown sugar and soy sauce creates a rich, deep flavor profile that complements the natural savoriness of the chicken.

Ingredients

Directions

  1. Trim the small wing tips from each chicken wing and discard them.
  2. Cut the remaining wing sections in half at the joint to create drumettes and flats.
  3. In a large bowl, combine soy sauce, pineapple juice, minced garlic, minced onion, grated ginger, brown sugar, beer, and vegetable oil. Stir well until the sugar is completely dissolved.
  4. Add the chicken wings to the marinade, ensuring every piece is thoroughly coated. Cover and refrigerate for several hours or overnight for best results.
  5. Remove the wings from the marinade, reserving the liquid in a separate container.
  6. Heat a large skillet over medium heat with a small amount of oil. Brown the chicken wings on all sides until golden, working in batches if necessary to avoid crowding.
  7. Once browned, return all wings to the skillet (or use one large enough). Pour in 1/2 cup of the reserved marinade.
  8. Cover the skillet, reduce heat to low, and simmer for 15 to 20 minutes, or until the chicken is cooked through and tender.
  9. Stir occasionally, adding more marinade if the sauce reduces too quickly or the wings begin to stick.
  10. Once cooked, increase heat slightly to allow the sauce to thicken and glaze the wings.
  11. Transfer wings to a serving dish and sprinkle with toasted sesame seeds if desired.

Note

For best flavor, marinate the wings overnight. If short on time, a minimum of 2 hours is recommended.

You can cook these wings a day in advance. Store them in the refrigerator with some of the sauce. Reheat in an oven at 350F (175C) for 15-20 minutes, adding a splash of reserved marinade to keep them moist.

Serve hot in a chafing dish to keep the wings warm and the sauce fluid for parties.

Toasted sesame seeds add a nice nutty crunch and visual appeal, but are optional.
