Orange Creme Brulee^
Description
This elegant Orange Crme Brle transforms the classic French dessert with the bright, zesty notes of fresh orange juice and zest. The custard base is incredibly smooth and rich, enriched with egg yolks and heavy cream, while a splash of Grand Marnier adds a subtle, sophisticated warmth. The key to this dish is the contrast between the silky, cool custard and the shattering, hot caramelized sugar top. It is an impressive yet approachable dessert that shines at dinner parties or special celebrations. While it requires chilling time, the preparation is straightforward, relying on simple techniques like reducing juice and baking in a water bath. Serve it chilled for the best texture and flavor experience.Ingredients
Directions
-
In a small saucepan, bring the strained fresh orange juice to a boil over medium-high heat. Simmer until reduced to 1/4 cup, then remove from heat and set aside to cool slightly.
-
Preheat oven to 350F (177C). Position one rack in the upper third and one rack in the lower third of the oven.
-
In a medium saucepan, combine the whipping cream and 1 cup of sugar. Heat over medium heat, stirring occasionally, just until the sugar dissolves and the mixture is hot but not boiling. Remove from heat.
-
In a large mixing bowl, whisk the lightly beaten egg yolks until smooth. Slowly pour the hot cream mixture into the egg yolks, whisking constantly to temper the eggs and prevent curdling.
-
Stir the reduced orange juice, Grand Marnier, grated orange peel, and vanilla extract into the custard base until well combined.
-
Divide the custard evenly among 12 (3/4-cup) ramekins.
-
Place 6 ramekins on each of two baking sheets. Carefully pour boiling water into the baking sheets until it comes halfway up the sides of the ramekins.
-
Bake until the custards are set in the center but still slightly jiggly, about 40 minutes.
-
Remove ramekins from the water bath and let cool to room temperature. Cover with plastic wrap and refrigerate overnight to chill thoroughly.
-
Preheat the broiler. Place the chilled ramekins on a baking sheet.
-
Sprinkle approximately 1 teaspoon of light brown sugar evenly over the top of each custard.
-
Broil until the sugar melts and caramelizes into a crisp golden-brown crust, about 2 minutes. Watch closely to prevent burning.
-
Serve immediately while the sugar top is still warm and crisp.
